Sugar-free canning

First of all, sugar doesn’t make peaches safe to can.  It’s a common myth!  However, like most fruits, peaches have enough natural acidity to be canned safely without added sugar.  

Sugar does preserve the color, and to some extent, the flavor.  It also helps to extend the shelf life once opened.

Back to home canned peaches without sugar…the process is super simple although it can be time-consuming, especially if you’re dealing with large quantities of peaches.  But it’s such a rewarding process to turn fresh summer peaches into preserved foods to look forward to all winter long.

You’ll want to follow the instructions listed in the recipe below, but here’s a quick overview of the process.  I’ve included my step-by-step method because I know it can be tricky to figure out the specifics. 

  1. Prepare a hot water bath canner, lids and rings.
  2. Prepare a honey water solution.
  3. Cut peaches in half and remove pits and mushy spots.
  4. Blanch briefly (30 seconds) in boiling water, then transfer to ice water bath.
  5. Remove cooled peach halves to a thick towel to drain and remove skins.
  6. Fill jars with peach halves.
  7. Add honey water to each jar.
  8. Process pints for 20 minutes and quarts for 25.

Ingredients

  • peaches, about 1.5 pound per pint or 2-3 pounds per quart
  • honey
  • water

Instructions

  1. Prepare a hot water bath canner, plus jars, lids and rings.
  2. Prepare a honey water solution: Bring 9 cups of water to a boil, then reduce to a simmer and add 1 cup honey.
  3. Cut peaches in half and remove pits and mushy spots.
  4. Prepare a large bowl or pot of ice water.
  5. Bring a large pot of water to a boil.  Add peach halves and blanch briefly (30 seconds), then use a slotted spoon to transfer peaches to ice water bath.
  6. Remove cooled peach halves to a thick towel to drain and remove skins.
  7. Fill clean jars with peach halves.
  8. Add honey water to each jar, allowing 1/2 inch head space.
  9. Process pints for 20 minutes and quarts for 25 in a boiling water bath.
