A delicious way to start the day, this cheesy ham and egg bake serves up a hearty, real-food, farm-style breakfast.  We love to pair it with crusty home baked sourdough bread.  Yum!

Ingredients for cheesy ham and egg bake

With only four ingredients, plus salt and pepper, this hearty breakfast bake is a simple way to get a nourishing real food breakfast on the table.  You’ll need the following items:

  • Eggs: I always recommend using local, pastured eggs.  Pastured simply means the chickens have free range on pasture, or grass, where they can eat bugs and weeds and enjoy fresh air and sunshine.  This pastured lifestyle produces the most delicious and nutritious eggs!
  • Ham (or pork): Use local, pastured pork, if possible.  We enjoy smoked ham or any type of smoked pork in this recipe.  In fact, this is one of my favorite recipes for using up leftover smoked pork of any kind.
  • Cheese: Look for raw cheddar cheese and grate it yourself.  Bonus points if you can find it locally!
  • Butter: Skip the grocery store butter and get the farm-fresh kind from a local source.  Or try making it yourself!

How to make cheesy ham and egg bake

If you like simple, uncomplicated recipes, you’ll love this cheesy ham and egg bake!  Preparation is super-simple.  You can even complete steps 1-3 in advance, and add the eggs right before baking.

  1. Grease a 9×13 baking dish.
  2. Spread the shredded ham or pork on the bottom of the dish.
  3. Layer on half of the shredded cheese.
  4. Crack each egg and nestle in, one by one.
  5. Top with remaining cheese.
  6. Season with salt and pepper.
  7. Bake for about 10 minutes.
  8. Enjoy!

How to serve cheesy ham and egg bake

While this hearty egg bake makes a wholesome breakfast option, it also works well for dinner.  Breakfast for dinner, anyone?

With bread: I love to serve this egg bake with a slice of home baked sourdough bread.  It makes the perfect complement to the rich and savory flavors of the ham and cheese.

With greens: Another favorite compliment to this tasty egg bake includes sauteed greens such as spinach, chard, or kale.  

How to store leftover cheesy ham and egg bake

I recommend undercooking the eggs just a smidge when baking this recipe the first time.  This allows you to store the leftovers in the fridge and reheat in the oven for a second round of deliciousness, without overcooking the eggs the second time.

If you prepare your cheesy ham and egg bake in a dish with a lid, it’s easy to pop it into the fridge for later use.

Ingredients

Scale
  • 1 tablespoon butter
  • 12 eggs
  • 3 cups smoked ham or pork, shredded
  • 12 cups shredded cheddar cheese
  • salt, to taste
  • ground black pepper, to taste

Instructions

  1. Heat oven to 425 degrees Fahrenheit.
  2. Grease a 9×13 glass baking dish with butter.
  3. Spread the ham on the bottom of the dish, then layer on half the shredded cheese.
  4. Use the back of a spoon to create small craters and crack the eggs into those spots.
  5. Top with remaining cheese.
  6. Bake at 425 for 8-10 minutes or until eggs have cooked to your liking.
