Beet Power Smoothie
You guys, I know what you’re thinking. Beet Power Smoothie? Gag me with a spoon!
And actually, that was pretty much the reaction of Middle Bro when he tasted this smoothie. But he’s 7. He doesn’t count. Plus, he’s got this thing with textures.
So granted, this smoothie is not super smooth. It’s a bit chalky, in fact. But I promise you it’s delicious! And you’ll feel so good about downing a few extra servings of veggies in the process.
If you grow a garden, this Beet Power Smoothie is a fantastic way to use up your carrots, beets, and beet greens! It’s also a great way to add more leafy greens to your diet. I’ve been making a concerted effort to get more leafy greens into my family’s diet, and this Beet Power Smoothie definitely fits the bill.
By the way, Little Bro loved it. The beets turn everything a beautiful bright purpley pink color, so it resembles a berry smoothie. <<wink>>
He did notice the texture, and eyed me suspiciously after his first sip. “What dis called?” he wanted to know. “It’s a purple smoothie,” I told him truthfully. He pondered for a moment, took another sip and then polished off his smoothie and asked for more.
One quick note about bee pollen…have you tried it? It’s a superfood! Packed with antimicrobial, antiviral, and antioxidant properties, plus amino acids, bee pollen is a great way to add extra nutrients to smoothies and other foods. It’s also anti-inflammatory, supportive to the nervous system, and helpful for allergies, menopause symptoms, and liver function. I add a bit of bee pollen to smoothies every chance I get.

- 1 ripe banana
- 1/2 – 3/4 cup frozen mango chunks
- 1–2 carrots, depending on size
- 1/2 – 2 beets, halved, depending on size (I used one whole beet about the size of my fist and cut in half.)
- 1 huge handful of beet greens + stalks
- handful of almonds, about 1/4 cup
- water, about 1.5 cup
- optional: 1 tablespoon bee pollen
- Combine all ingredients in a high powered blender. I use a Vitamix.
- Blend until smooth.
