I’ll admit it: I used to look down on the lowly meatloaf, that classic dinner dish served for decades by housewives across the nation.  That is, until I met this Paleo Crockpot Sweet Potato Meatloaf.  This ain’t your grandma’s meatloaf!

This grain-free, nutrient-dense, and dare I say delicious version of the humble meatloaf has earned a regular spot on my family’s meal rotation.  When you try it, I bet you’ll add this Paleo Crockpot Sweet Potato Meatloaf to your make-often recipe list, too!

With only seven ingredients, it’s a snap to throw together.  I mix everything together right in the crockpot!

Serve this Paleo Crockpot Sweet Potato Meatloaf with a few simply prepared veggies such as Sauteed Green Beans with Bacon, Roasted Carrots, Mashed Cauliflower Faux-tatoes, Sauteed Red Peppers, or Sauteed Spinach with Bacon.  Add these easy and delicious Almond Flour Biscuits, if you like.

Paleo Crockpot Sweet Potato Meatloaf

Ingredients

  • 2 lbs ground beef
  • 3 cups grated sweet potato (about 2 small potatoes)
  • 2 eggs
  • 2 teaspoons unrefined sea salt
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground black pepper


Instructions

  1. Wash sweet potatoes thoroughly, and dry.
  2. Cut potatoes to fit through food processor. (No need to peel.)
  3. Shred sweet potatoes with the grating blade of your food processor.
  4. Transfer sweet potatoes to the crockpot.
  5. Add ground beef and remaining ingredients to the crock pot.
  6. Mix well, then use a spatula or the back of a big spoon to press mixture into the bottom of the crock.
  7. Cook on low for 6-8 hours.

    If I were to make this in the oven in a 9×13″ dish, about how long would you say to cook it? 350 degrees for 45 minutes? This looks great! Thank you!

      Hmmm, Emily, I’m not sure. I’ve never made it in the oven, but it seems that most meatloaf-in-the-oven recipes call for baking at 350 for 1 hour. My two concerns with making this meatloaf in the oven are: 1) You might need to add more liquid to keep it from drying out and 2) You want to make sure the sweet potatoes are well cooked. It’s definitely worth a shot! Let me know how it goes…

    Hi there, how might you make this in an instant pot? I really want to make it but only have an instant pot now. Thanks

      I don’t have an IP, Jen, but according to these tips for converting crock pot recipes to instant pot recipes, you can try cooking the meatloaf for 25 minutes. Use the meat/stew button and set the vent to “sealing”. Also add about 1 cup liquid (broth seems best, water may work too). I’d love to hear how it works in your instant pot!

    Did you Brown the beef before mixing it in the crock pot? Ours was in nearly 8 hours and still appeared on the pink side!
