How to Make SCOBY Candy

Did you know you can turn your leftover kombucha scobys into scoby candy?
Of course, you can also compost your leftover kombucha scobys, or feed them to the chickens. Our pigs love scobys too!
But why toss them when, with a simple honey soak and a trip through the dehydrator, you can turn them into a healthy treat?
I know, it sounds crazy. I mean, I think we can all agree that kombucha scobys are kind of weird to begin with. And now we’re going to soak them in honey or maple syrup, dehydrate them, and eat them??
Yep. As my husband likes to say: we are so far off the reservation.
Actually, he doesn’t say it anymore. Because he knows. My crunchy ideas don’t really phase him anymore.
Anyhoo, this isn’t so much a recipe as it is a loose procedure. Scoby candy is so easy, even a kid can make it. Mine do!
How to Make Scoby Candy
First I’ll describe the process, with pictures. After that, I’ll provide the printable recipe without all the pictures to save you from printing out a bajillion pieces of paper.
- Make kombucha!
- Place leftover scobys in a glass bowl and cover with honey or maple syrup. I always recommend raw, local, unfiltered honey.
- Cover the bowl to ward off pests, and let it rest for 24 hours.
- Gently transfer soaked scobys to a cutting board.
- Arrange strips on dehydrator sheets lined with parchment paper.
- Dry at about 110 or until the strips reach your desired consistency.
- Peel strips off parchment paper and store in an airtight container.

Ingredients
- leftover kombucha scobys
- raw honey or maple syrup
Instructions
- Place leftover scobys in a glass bowl.
- Cover with raw honey or maple syrup.
- Cover the bowl and let it rest for about 24 hours.
- Gently transfer soaked scobys to a cutting board and cut into strips.
- Arrange on dehydrator sheets.
- Dry at about 110 or until the candy reaches your desired consistency.
- Peel strips off parchment paper and store in an airtight container.
