The method for this Slow Cooker Roast Beef is super simple, and yields tasty, tender meat.

Tip: After enjoying your slow cooker roast beef, use the leftover meat to make this delicious Paleo Beef & Veggie Soup with Sweet Potato.  In fact, for my family of five, I often prepare two roasts in order to have plenty of leftovers for soup.

Slow Cooked Roast with Essential Oil Seasoning Salt

Description

A deliciously simple way to slow cook a beef roast. Tip: After enjoying your roast, use the leftover meat to make this delicious Paleo Beef & Veggie Soup with Sweet Potato.


Ingredients

Scale
  • 12 TB coconut oil
  • 1 large roast (about 4 lbs)
  • 1/2 c red wine
  • 1/2 c balsamic vinegar
  • 2 TB seasoning salt, or to taste
  • 2 cups water or broth

Instructions

  1. Heat a large skillet (I prefer cast iron) over medium heat and add 1-2 TB coconut oil.
  2. Sear a large roast (about 4 lbs) by browning for a few minutes on each side.
  3. Place the roast in a slow cooker.
  4. Pour about ½ cup red wine over the meat.
  5. Pour about ½ cup balsamic vinegar over the meat.
  6. Sprinkle with seasoning salt to cover the roast, lifting it a bit to cover the underside.
  7. Add 1-2 cups water or broth.
  8. Cook 8 hours on low.
  9. Serve with Mashed Faux-tatoes, roasted carrots, or other simply prepared veggies.

    We loved it! I was worried that 1/2 cup of balsamic vinegar was too much, but it was delicious. Also, I used the instant pot with this recipe. Thanks!
