3 Pineapple Electrolyte Recipes for Kids: Gummies, Popsicles & Slushies
There’s something about pineapple that feels like the perfect way to savor the last days of summer. Pineapple is such a good fit for these last hot weeks of summer, especially in cold treats you can pull from the freezer or blend up in a few minutes.
Today I’m sharing three easy pineapple treats that were a huge hit with my family: homemade gummies, creamy popsicles, and frosty slushies.
My boys, ages 12, 16, and 19, loved all three. And my husband and I especially loved the grown-up version of the slushies.

A Note About Pineapple Juice
Pineapple juice plays a starring role in all three recipes, so this is one place where I like to pay attention to the ingredient label.
Look for a clean pineapple juice with no added sugar.
Pineapple is plenty sweet on its own, and there’s no need to add extra sugar to these recipes through the juice.
1. Pineapple Electrolyte Gummies
These pineapple gummies might be the most fun of the three recipes.
They’re cool, chewy, fruity, and easy to grab straight from the refrigerator. Grass-fed gelatin gives them their classic gummy texture, while pineapple juice and Re-Lyte Kids Pineapple provide all that tropical flavor.
Fun molds are completely optional. A glass dish actually makes it easier to pour the mixture and also to cut the gummies into squares. However, molded shapes definitely add to the fun factor and if you’re in the market for LEGO-style molds, these are a good option.
Ingredients
- 2 to 3 scoops Redmond Re-Lyte Kids Pineapple
- 2 cups pineapple juice, preferably a clean brand with no added sugar
- 3 to 4 tablespoons grass-fed gelatin
How to Make Pineapple Electrolyte Gummies
- Sprinkle the gelatin into a glass measuring cup or bowl.
- Pour 1 cup of pineapple juice over the gelatin and allow it to bloom for 1 to 2 minutes.
- Meanwhile, add the remaining 1 cup pineapple juice to a small saucepan and bring it to a gentle simmer.
- Stir the Re-Lyte Kids Pineapple into the warm juice until completely dissolved.
- Whisk the warm pineapple juice mixture into the bloomed gelatin until fully combined and smooth.
- Pour the mixture into silicone molds or a shallow glass dish.
- Refrigerate for about 2 hours, or until completely set.
- Remove the gummies from the molds. If you used a glass dish, cut the mixture into cubes.

How to Store Homemade Gummies
Store the finished gummies in an airtight container in the refrigerator.
2. Pineapple Coconut Electrolyte Popsicles
These creamy pineapple popsicles have such a good tropical flavor.
Full-fat coconut milk makes them rich and creamy, while frozen pineapple and pineapple juice keep them bright and refreshing.
And with three scoops of Re-Lyte Kids Pineapple blended right into the batch, they’re another fun way to serve electrolytes on a hot day.
Note: my kids love these push pop molds.
Ingredients
- 2 cans full-fat coconut milk
- 1/2 cup frozen pineapple chunks
- 1/2 cup pineapple juice, preferably a clean brand with no added sugar
- 3 scoops Redmond Re-Lyte Kids Pineapple
How to Make Pineapple Coconut Popsicles
- Add all ingredients to a blender.
- Blend until completely smooth.
- Pour into popsicle molds.
- Freeze overnight.
That’s it!
Try This Popsicle Cube Trick
I poured some of my popsicle mixture into 2 x 2-inch silicone cube molds instead of traditional popsicle molds. You could also use a regular ice cube tray.
This turned out to be especially handy because I later used the frozen cubes to make our pineapple slushies. I added one 2 x 2-inch frozen popsicle cube per person. It made the slushies extra cold and creamy while carrying the pineapple, coconut, and Re-Lyte flavors right into the next recipe.
3. Pineapple Slushies
If you need something cold and refreshing on a hot afternoon, this might be the easiest recipe of the bunch.
Frozen pineapple creates the slushie texture without needing a bunch of ice, and pineapple juice helps everything blend together.
You can keep it simple with just pineapple and juice, add one of those frozen pineapple coconut popsicle cubes, or splash in a little coconut milk for a creamier piña colada-style slushie.
Ingredients
- 2 cups, or about 12 ounces, frozen pineapple chunks
- 8 ounces pineapple juice, preferably a clean brand with no added sugar
- Optional: 1 frozen 2 x 2-inch Pineapple Coconut Electrolyte Popsicle cube per person OR a splash of full-fat coconut milk + 1 scoop Redmond Re-Lyte Kids Pineapple
For an adult version:
- 1 to 2 tablespoons rum per serving
How to Make a Pineapple Slushie
- Combine the frozen pineapple and pineapple juice in a blender.
- If desired, add one frozen pineapple coconut popsicle cube per person or a splash of coconut milk.
- Blend on high until well blended and slushy.
- Pour into glasses and enjoy immediately.
- Optional: add a stainless steel straw.
Make It a Piña Colada-Style Slushie
For a creamier piña colada-style version, add one of the frozen pineapple coconut popsicle cubes or a bit of coconut milk before blending.
And for the adults, add 1 to 2 tablespoons of rum per serving.
My husband and I loved this grown-up version.
If you’re making both kid and adult slushies, blend and serve the kids’ batch separately before adding any rum.
Tips for Success
Let the gelatin bloom.
For the gummies, don’t skip that short blooming period. Giving the gelatin a minute or two to absorb the pineapple juice helps it dissolve more smoothly when you add the warm mixture.
Warm the juice gently.
There’s no need for a hard boil. A gentle simmer is plenty for dissolving the Re-Lyte and preparing the warm portion of the gummy mixture.
Use full-fat coconut milk.
For the popsicles, full-fat coconut milk creates the creamy texture that works so well with pineapple.
Freeze a few cubes.
Even if you’re making traditional popsicles, pour a little extra mixture into silicone cube molds or an ice cube tray. You’ll be glad you did when it’s time to make slushies.
Adjust your slushie texture as needed.
Frozen pineapple gives the mixture its thick, frosty texture. A little extra pineapple juice will loosen it up if your blender needs some help.
Three Recipes, One Favorite Summer Flavor
I love recipes like these because they make something I already want to provide for my family even easier to enjoy.
Hydration doesn’t always have to mean handing everyone another glass of water. Sometimes it looks like a pineapple gummy pulled from the refrigerator. Sometimes it’s a creamy popsicle after a hot afternoon outside. And sometimes it’s a frosty pineapple slushie, preferably with a frozen coconut-pineapple cube whirling around in the blender.
