Description

A quick, frosty pineapple slushie made with frozen pineapple and pineapple juice, with an optional creamy coconut variation.


Ingredients

Scale
  • 2 cups, or about 12 ounces, frozen pineapple chunks
  • 8 ounces pineapple juice, preferably a clean brand with no added sugar
  • Optional: 1 frozen 2 x 2-inch Pineapple Coconut Electrolyte Popsicle cube per person OR a splash of full-fat coconut milk + 1 scoop Redmond Re-Lyte Kids Pineapple
  • For adults only: 1 to 2 tablespoons rum per serving


Instructions

  1. Combine frozen pineapple and pineapple juice in a blender.
  2. Add one frozen pineapple coconut popsicle cube per person or a splash of coconut milk, if desired.
  3. Blend on high until well blended and slushy.
  4. Pour into glasses and enjoy immediately.
  5. For an adult piña colada-style version, add 1 to 2 tablespoons rum per serving.
  6. Optional: add a stainless steel straw.

Notes

The frozen pineapple coconut cubes make the slushie extra creamy while also adding the Re-Lyte Kids Pineapple from the popsicle recipe. Keep any adult version completely separate from servings intended for kids.
