Instructions

While the sweet potatoes are roasting, chop your apples into half-inch cubes and red onion into about 1-inch sections. Toss them with a little oil and spread them out on a separate baking sheet—this way, you can pull them out if they finish before the potatoes. Roast for about 15 minutes, or until tender.
