Pear Crisp

Recently, we enjoyed a morning of pear-picking with some of our favorite friends. The kids had a blast, and picked way too many pears for us to eat in a reasonable time frame.
So I tracked down this recipe from Elana Amsterdam of Elana’s Pantry, and tweaked it just a bit. It turned out great! Enjoy…
Pear Crisp {gluten, dairy & egg-free}
Ingredients
- 1/2 cup apple juice*
- 1 TB lemon juice
- 1 TB arrowroot powder
- 1 tsp nutmeg
- About 5 pears, peeled, cored and sliced to about 1/4-inch thickness.
Topping
- 2 cups blanched almond flour
- 1/2 tsp unrefined sea salt
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 cup melted coconut oil
- 1/4 cup raw, local honey
- 1 TB vanilla extract
Instructions
- Preheat oven to 350°.
- In a medium bowl, whisk together the first four ingredients.
- Add the pears and toss until evenly coated.
- Transfer pears to 8×8 baking dish.
- In a large bowl, combine almond flour, salt, cinnamon and nutmeg.
- In a small bowl, whisk together coconut oil, honey and vanilla.
- Stir the wet ingredients into the dry mixture until coarsely blended.
- Sprinkle the topping over the pears and cover the dish with foil.
- Bake for about 45 minutes. Remove foil and bake for another 5 to 10 minutes, until golden brown and bubbling.
- Let it cool for about 30 minutes and serve warm.
*We don’t keep juice around at the Yankee Homestead, so I actually used the Vitamix to whip up a tiny batch of juice from a few apples we had on hand. It was really easy, and since I intended to bake with the juice, I didn’t have to be too fussy about the thickness. Here’s the procedure: Apple Juice.
