These truffles are my new favorite treat–easy to make and good for you, too. And what could be better than an easy summer treat that doesn’t require the use of an oven?

No Bake Chocolate Truffles {gluten, dairy & egg-free, with nut-free option}

Description

Gluten, dairy & egg-free, with nut-free option.


Ingredients

Scale
  • 5 TB coconut cream concentrate, softened (I used homemade coconut butter
  • 4 TB raw cacao powder
  • 1 TB vanilla extract
  • 1/2 cup coconut milk
  • 1 TB raw honey (or more)
  • 1/2 cup chopped nuts (I used crispy pecans and hazlenuts*)

Instructions

  1. (Soften coconut butter or cream.)
  2. (Chop nuts and place in a bowl for rolling.)
  3. Add all ingredients except nuts to a food processor and pulse (or mix by hand in a bowl) until well-combined and smooth.
  4. Refrigerate mixture about 20 minutes until it hardens a bit, but is still soft enough to roll into balls.
  5. Form into small balls and roll in chopped nuts.
  6. Store in the fridge. (They’ll harden even more when you leave them in the fridge for an hour or so.)
  7. Enjoy!

Notes

*For nut-free, use extra cacao powder and/or shredded coconut for rolling.

    Sounds delish, how do you make your coconut butter Kathleen?

      In the blender, Linda! So easy: just add shredded coconut to a high speed blender and blend until smooth-ish. You’ll need to stop now and then to scrape down the sides and give the motor a rest. If you don’t have a high powered blender (like a Vitamix or Blendtec), you may need to add a bit of coconut oil. Or you can buy premade coconut butter, but it’s kinda pricey. Hope that helps!
