One of our Christmas Countdown activities every year is {of course} baking Christmas cookies.  This year, the boys really wanted to make gingerbread cookies.  So we used this trusty recipe, and they turned out great!

The dough does tend to get crumbly, so you may want to experiment with adding a bit more coconut oil and/or water.  Working the dough in your hands prior to rolling also warms up the coconut oil and makes a softer dough.

These cookies are gluten-free, dairy-free, egg-free, nut-free and sugar-free.  (Don’t worry: they still taste good!)
