Creamy Paleo Broccoli Slaw: A Fun Twist on Classic Coleslaw
Looking for a fresh, crunchy, and totally delicious side dish that’s gluten-free, paleo-friendly, and packed with flavor? This Creamy Paleo Broccoli Slaw is the answer!
It’s a fun twist on traditional coleslaw, featuring a creamy, tangy dressing that pairs beautifully with meats of all kinds—especially smoked, barbecued, or grilled. Perfect for picnics, potlucks, and weeknight dinners, this slaw is so good that even the biggest broccoli skeptics will come back for seconds!
If you don’t have bagged broccoli slaw on hand, no worries—you can swap it out for shredded green and red cabbage for a more classic coleslaw. But if you’re feeling adventurous, give this version a try!
Ingredients
Each ingredient in this Creamy Paleo Broccoli Slaw brings its own little magic to the mix:
The Slaw
- Bagged broccoli slaw – Crunchy, fresh, and packed with nutrients—this is the star of the show!
- Shredded carrots – A touch of natural sweetness and color to brighten up the bowl.
- Red onion – Adds just the right amount of bite and zing.
The Dressing
- Mayo – Homemade is best (it’s seriously easy to make!) but store-bought works too. This is what gives the slaw its rich, creamy texture.
- Apple cider vinegar – A little tartness to balance the creaminess and bring everything together.
- Dijon mustard – Adds depth and a hint of spice.
- Honey – Just a touch to mellow out the vinegar and mustard.
- Unrefined sea salt – Because every great dish needs a little salt to make flavors pop.
- Ground black pepper – For that subtle, peppery warmth.
How to Make It
This slaw couldn’t be easier to throw together, which makes it an ideal last-minute side dish.
- Prep the veggies – Add your bagged broccoli slaw, shredded carrots, and finely diced red onion to a big bowl.
- Mix the dressing – In a separate small bowl, whisk together the mayo, apple cider vinegar, Dijon mustard, honey, sea salt, and black pepper until smooth.
- Combine – Pour that creamy, dreamy dressing over the slaw and give everything a gentle toss. The goal is to coat all the veggies without crushing them.
- Adjust if needed – Taste and tweak the seasoning if necessary—maybe an extra pinch of salt or a little more honey to round things out.
- Chill – Pop the slaw in the fridge for at least 15–30 minutes before serving. The flavors meld together beautifully as it chills.
- Serve & enjoy – Serve cold alongside your favorite meats and watch it disappear!
Bonus: This slaw keeps well in the fridge for 3–4 days, so it’s great for make-ahead meal prep!
Whether you’re planning a summer cookout, prepping for a potluck, or just looking for a way to sneak more veggies into your meals, this Creamy Paleo Broccoli Slaw is the way to go. Give it a try and let me know what you think!
