Chunky Monkey: a frozen, sugar-free treat

Just before dinner one night, I made this batch in the Vitamix–which produced a smooth mixture resembling pudding. Storing it in the freezer for about 45 minutes chilled and thickened it to where it did actually taste like pudding. We sprinkled Make Your Own Chocolate Chips on top. Score one for Mom! Everyone loved it.
This is one of Mr. Native Texan’s favorites, but we all love it here at the Yankee Homestead. We relied heavily on this recipe at the beginning of our Strange New Journey. Sometimes we’re too impatient to chill (ha!), but the chilling really does make a big difference. The ingredients and amounts are suggestions; we never measure them exactly.

Chunky Monkey
Ingredients:
- 1 ripe banana
- 1 large spoonful nut butter (almond)
- 1 TB raw cocoa powder
- Vanilla stevia drops to taste (6-8)
- Cinnamon to taste (1/4 tsp)
- Vanilla extract (1/4 tsp)
- Optional: shredded coconut
Instructions:
- Mash banana in bowl with fork.
- Add remaining ingredients.
- Stir.
- Chill (or freeze).
- Enjoy!

this is my favorite! I do this all the time…never thought to add cinnamon 🙂 I do sometimes add chocolate chips from enjoy life!
