Paleo Blueberry Blender Waffles

Instructions

  1. Preheat waffle iron.
  2. Add all ingredients except blueberries to a high speed blender, in the order listed.
  3. Blend on low for about 30 seconds, then gradually increase to high and process until smooth.
  4. Pause blender and add blueberries.*
  5. Blend briefly on low until most of the berries are chopped. Do not puree the berries! You want to see little chunks and even whole berries floating in the batter.
  6. Pour directly into waffle iron and cook until golden and fluffy.
  7. Serve with maple syrup and more fresh blueberries.
