Ingredients

Scale
  • zest of 2 lemons
  • 1/3 cup honey
  • 1/2 cup coconut oil (or unsalted butter)
  • 4 eggs
  • 1/2 cup lemon juice, freshly squeezed
  • 1/8 teaspoon fine sea salt (see notes)

Instructions

  1. Combine all ingredients in a medium saucepan.
  2. Heat on low, whisking constantly until all ingredients are combined and have thickened slightly.
  3. Strain mixture and pour into jars.
  4. Refrigerate or freeze and use as needed!
