Description
Savory sausage grillers are served with potatoes, carrots, leeks, onions, and broccoli tossed in a lightly sweet peach thyme glaze. This hearty roasted vegetable dinner is also part of an easy One Meat, Three Meals plan.

- 2 onions, peeled and cut into chunks
- 3 carrots, peeled and cut into chunks
- 2 large leeks, washed well and cut into large chunks
- 4 large potatoes, cut into large chunks
- 1 to 2 cups broccoli florets
- 6 to 10 sausage griller links
- 1 tablespoon avocado oil
- 1 tablespoon dried thyme
- Salt, to taste
- Black pepper, to taste
- 8 ounces fruit-only peach jam
Instructions
- Preheat the oven to 425°F.
- Line two large rimmed baking sheets with parchment paper, if desired.
- Chop the onions, carrots, leeks, potatoes, and broccoli into large pieces, aiming for similar sizes so they cook evenly. Keep the potatoes separate from the other vegetables.
- Place the potatoes on one baking sheet. Place the onions, carrots, leeks, and broccoli on the second baking sheet.
- Divide the avocado oil, dried thyme, salt, and pepper between the two pans. Toss the vegetables until evenly coated, then spread them into single layers.
- Place both pans in the oven and roast until the vegetables are tender and browned, stirring or turning them as needed.
- Check the mixed vegetables first and remove them when they are tender. Continue roasting the potatoes until they are fully cooked and crisp around the edges.
- While the vegetables roast, cook the sausage links on a grill or in a covered cast iron skillet, turning regularly until browned on all sides and cooked through.
- Transfer all the roasted vegetables to a large bowl while they are still hot.
- Add the peach jam and toss until the heat from the vegetables softens the jam and coats everything evenly.
- Serve the peach thyme roasted vegetables with the browned sausage links and freshly baked sourdough, if desired.
Notes
- Chop the vegetables up to one day ahead and store them in the refrigerator until ready to roast.
- Keep the potatoes separate because they often require more cooking time than the other vegetables.
- Avoid overcrowding the pans. Use additional pans if needed so the vegetables roast instead of steam.
- Fruit-only peach jam works best because it adds peach flavor without making the dish overly sweet.
