Description
Sweet apples, hearty sweet potatoes, and caramelized red onion come together in this cozy, kid-friendly fall side dish. Roasted separately for perfect texture, then combined for a warm, flavorful pairing with pork chops, roast beef, or chicken. I always double this recipe for my family of five, which gives us plenty for one meal plus a little left over.

			- 2 large apples, chopped
- 3-4 cups sweet potatoes, chopped
- 1 small red onion, chopped
- 2 teaspoons avocado or coconut oil, melted
- Unrefined sea salt, to taste
- Ground black pepper, to taste
Instructions
- Preheat oven to 400 degrees F.
- Chop sweet potatoes into 1-inch cubes and toss with oil, season with salt and pepper, and roast on a baking sheet for about 20 minutes or until about three-quarters cooked.
- Chop apples into half-inch cubes and red onion into about 1-inch sections. Toss with a bit more oil and roast on a separate baking sheet for about 15 minutes or until tender. Continue roasting sweet potatoes until tender.
- When potatoes, apples, and onions are finished cooking, combine in a serving bowl and serve hot with your meat of choice.
