Ingredients
Scale
- 2 TB bacon drippings, butter, or fat of choice
- 1 small red onion, diced
- 6–8 cups fresh kale, chopped
- 1–2 teaspoons maple syrup
- salt and fresh pepper, to taste
Instructions
- Heat a large cast iron skillet over medium heat and melt 1-2 TB bacon drippings in the hot skillet.
- Add red onions and cook until tender.
- Remove thick center stems from kale leaves and chop the leaves.
- If necessary, add a bit more fat, then add chopped greens and stir to combine.
- When greens are cooked to your liking, remove from heat and drizzle with maple syrup.
- Season to taste with salt and freshly cracked black pepper.
