Description

Preserve garlic scapes with homemade garlic scape powder! A fresh, flavorful alternative to garlic powder that lasts all year.

Ingredients

Garlic scapes, diced

Instructions

  1. Dice garlic scapes.  Alternatively, cut scapes into 2-3 inch sections, then pulse in a food processor until chopped but not pulverized.
  2. Spread diced scapes on a dehydrator tray lined with parchment paper.
  3. Dry at 115°F–125°F for 8–12 hours or until completely dry and crispy.  The time will vary based on the size of your diced scapes, your particular dehydrator, and the current humidity level.
  4. Add the dried scapes to a high-speed blender, spice grinder, or mini chopper and grind until you have a fine powder.
  5. Store in a sealed jar away from heat and light.
  6. Don’t forget to label your jar of garlic powder!
  7. To use, simply substitute for regular garlic powder.

Notes

  • 1 cup diced garlic scapes yields approximately 1/3 cup powder.
  • 4 tablespoons or 1/4 cup dried garlic scapes yield approximately 2-3 tablespoons powder.
