Preserve garlic scapes with homemade garlic scape powder! A fresh, flavorful alternative to garlic powder that lasts all year.

Instructions
- Dice garlic scapes. Alternatively, cut scapes into 2-3 inch sections, then pulse in a food processor until chopped but not pulverized.
- Spread diced scapes on a dehydrator tray lined with parchment paper.
- Dry at 115°F–125°F for 8–12 hours or until completely dry and crispy. The time will vary based on the size of your diced scapes, your particular dehydrator, and the current humidity level.
- Add the dried scapes to a high-speed blender, spice grinder, or mini chopper and grind until you have a fine powder.
- Store in a sealed jar away from heat and light.
- Don’t forget to label your jar of garlic powder!
- To use, simply substitute for regular garlic powder.
Notes
- 1 cup diced garlic scapes yields approximately 1/3 cup powder.
- 4 tablespoons or 1/4 cup dried garlic scapes yield approximately 2-3 tablespoons powder.
